Samphire Potato Pancakes

In the Czech Republic we call them bramborák. They are a staple on our family table. Much to the annoyance of my dad, who can never make enough!

A great way to include this coastal super food in to your diet. It can be served as an accompaniment to a meal, or simply dipped in your favourite sauce! 

 

Ingredients

  • 60g Samphire (chopped)

  • 100g Plain flour

  • 2 Eggs

  • 500g Peeled & grated potatoes

  • 1 Tsp Dried rosemary (or fresh)

  • 1 Tsp Dried parsley (or fresh)

  • 1/2 Tsp Dried marjoram (or fresh)

  • 5 Cloves minced garlic

  • 100ml Milk (or dairy free alternative)

  • Seasoning

 

Method

Step 1

Mix all ingredients in a bowl. Add salt and pepper to taste.

Step 2

Using a ladle spoon ingredients in batches in to a hot pan with oil. How big or small you want to make them, is up to you. Be sure to turn over so both sides have a lovely brown colour.
