Elderflower Syrup

There’s no shortage of elderflower cordial recipes online. So this doesn't need much introduction. We've opted not to use citric acid & used limes in place of lemons.
Ingredients
100g Elder flowers (leaf & as much of anything other than flower removed)
2 Limes sliced
4 Additional tbsp lime juice
600g Caster sugar
600g Water
1/2 TSP Citric acid (optional)
Method
Step 1
Bring sugar, lime & water up to a boil and leave for 1 minute on a high boil. Refrigerate until Luke warm.
Step 2
Drop the flowers in to the mixture and press down so the flowers are fully submerged. And leave for 48 hours in the fridge or a dark cool room.
Step 3
Pass through a fine sieve (also some cheese cloth or a towel). Transfer to a sterile container and refrigerate.
